Ingredients:
1 1/4 cup: Graham cracker crumbs, (16
-filling or 1 cup dairy,
-crackers, or a ready-made
-sour cream, for topping
-crust),
1 each: Preheat oven to 350,
2 T: Sugar,
-degrees. Stir together,
3 T: Butter, melted
-the grahm crackers, 2
2 each: 8 oz. packages plus 1 3 oz.,
T Of sugar and melted butter.,
-package cream cheese,
2 each: Press the crumbs into a,
-softened,
-9: -inch pan. Bake this,
1 cup: Sugar,
-crust 10 minutes, then
2 t: Grated lemon peel,
Cool.,
3 each: Eggs,
3 each: Reduce the heat to 300,
1/4 t: Vanilla,
-degrees. Beat the cream,
1 can: Cherry or blueberry pie,
-cheese, when it is

Directions:
whipped, add 1 cup of sugar and beat mixture until it is fluffy. 4.
Add the lemon peel and vanilla. 5. Beat in one egg at a time. 6. Pour
this mixture into the cooled crumb crust; bake the cake one hour,
until the center is firm. 7. Cool the cake to room temperature.
Yield: 12 servings. This is a rich, delicious cheesecake, New York
deli style. It makes a good alternative to the standard layer cake
for birthdays.
