Grilled Eggplant With Pesto Recipe

Ingredients:
1 small: Eggplant,
Salt,
1/4 cup: Pesto,
Directions:
Slice eggplant in 1/2 inch slices. Lightly salt and place in a
colander to drain. Squeeze out excess juices. Broil or grill until
lightly charred and tender. Spread with a light coat of pesto and
serve at room tempertature.
