Summertime Chicken Salad Recipe

Ingredients:
1/2 cup: Mayonnaise Dressing,
1/8 tsp: Pepper,
-BEST FOODS Reduced Fat,
1 tsp: Curry powder, optional
-Cholsterol Free,
2 cup: Cubed, cooked chicken
-or Light Mayonnaise,
4: Peaches or nectarines, cubed
2 tbsp: Lemon or lime juice,
1 cup: Sliced celery, 2 ribs
1 tsp: Sugar,
1/4 cup: Sliced green onions,
1/2 tsp: Ground ginger,
1/4 cup: Toasted slivered almonds,
1/4 tsp: Salt,
-, optional
Directions:
1. In large bowl whisk together mayonnaise, lemon or lime juice,
sugar, ginger, salt and pepper (for curried chicken salad whisk in
curry powder).
2. Stir in chicken, peaches, celery and green onions.
3. Cover and chill. Before serving, stir in almonds if desired.
Nutrition information per serving (with Reduced Fat): 180 Calories,
15g Protein, 17g Carbohydrates, 6g Fat, 40mg Cholesterol, 300mg
Sodium.
