Ingredients:
9 cup: Chicken stock,
1 tbsp: Miso or low sodium soy,
2 cup: Chopped fresh spinach,
-sauce,
6 large: Mushrooms, thinlysliced
1/4 tsp: Fresh lemon juiuce,
1 medium: Onion, thinly sliced
1: Egg white,

Directions:
Bring stock to a boil. Add remaining ingredients except egg white.
reduce heat and simmer 15 minutes. Beat egg white slightly and drop
in ribbons into stock. Simmer 3 minutes. Serve hot. Makes 10 servings.

Variation: Eliminate egg white and add 1 poached shredded chicken
breast.
