Potato Apple Soup Recipe

Ingredients:
1 cup: onion, chopped
1/4 cup: celery, sliced
1 lb: potatoes, peeled and cut into 1/2 s
1 1/2 cup: chicken broth,
1: apple, finely diced
1/4 cup: fresh dill, chopped
1 cup: half-and-half,
1: salt,
1: pepper,
Directions:
In a large saucepan, combine onion, celery, potatoes and broth. Place
on stove top over medium-high heat and cook 15-20 minutes or until
potatoes are tender. Turn off heat, then use mixing spoon to stir in
apple and let mixture stand, covered, 5 minutes. Place mixture in
blender or food processor and puree until smooth. Return mixture to
saucepan, stir in dill and half-and-half and season with salt and
pepper. Cook over low heat about 5 minutes, then serve immediately.
