Ingredients:
1: karen adler fngp13b,
1: 4 to 5 pound beef rump roast,
2 tablespoon: bacon drippings or oil,
1: onion, chopped
1 cup: beef stock,
2 tablespoon: cornstarch,
2 tablespoon: cold water,
MARINADE
1 1/2 cup: dry red wine,
3/4 cup: red wine vinegar,
1 cup: water,
1: carrot, peeled and chopped
1: onion, peeled and chopped
1: bay leaf,
10: peppercorns, whole
6 cloves: whole,
1/2 teaspoon: thyme,
1: salt and pepper to taste,
Directions:
FOR MARINADE: Combine ingredients in a large saucepan. Bring to boil.
Simmer 5 minutes. Remove from heat. Cool and use as directed. Place meat in
a deep bowl. Add marinade. Cover and refrigerate at least 3 days. Turn
occasionally. When ready to cook, remove meat from marinade. Pat dry with
paper towels. Strain marinade and set aside. Heat drippings in a large
frying pan. Brown meat on all sides. Add onions. Saute until golden.
Transfer meat and onions to crockery pot. Add stock and 1 cup strained
marinade. Cover. Cook on low (200 degrees) 8 to 10 hours or until tender.
Remove to heated platter and keep warm. Turn heat to high (300 degrees).
Blend cornstarch and water. When gravy is bubbling, stir in cornstarch
mixture. Cook until thickened. Serve with meat. From Extra-Special
