2 tbsp: Olive oil,
2 lbs: Chicken thighs, or
Drumsticks, 8 pcs
1 medium: Onion, chopped (about 1
C),
1 can: , 28oz
Chopped,
2 tbsp: Tomato paste,
1 tbsp: Dried parsley, (flakes)
2 tsp: Garlic powder,
1/4 tsp: Crushed red pepper,
2 can: White beans, (cannellini)
Drained,
Tomatoes, (whole),
Directions:
Heat the olive oil over medium heat in a large skillet. Brown the
chicken for 10 minutes on each side. Add the onion and saute for
about 2 minutes; drain excess liquid. In a medium-sized bowl,
combine the remaining ingredients and add to the chicken. Reduce the
heat to low and simmer for 20 minutes, until the chicken is tender
and cooked through.
