Ghanaian Groundnut Soup Recipe

Ingredients:
1 cup: Peanut butter,
6 ounce: Tomato paste, can
Salt,
8: Chicken breasts [cut up],
1 large: Onion [cut up],
3 quart: Water,

IF NECESSARY
1 tbsp: Cornstarch, or more

Directions:
This is a copy of an old Ghanian [from Ghana] recipe a friend gave my
mother about 30 years ago. Kinda interesting. Its authentic, but I
think the real thing needs some serious hot sauce added.

Combine ingredients in large pot or pressure cooker. Cook until meat
is tender. If using pressure cooker, I cook it at 15 pounds pressure
for 1/2 hour. Scrape oil from top. Add corn starch if the gravy is
too thin. Serve over rice.

Beef or pork maybe substituted for the chicken, and if your family
enjoys fish, a quick way is to cook the ingredients (except meat)
until the onion is tender and add a large can of tuna or other fish.

For variety, you might like to substitute rat, lizard, or lion meat!!
