Cordon Bleu Chocolate Tartlets Recipe

Ingredients:
9 ounce: Flour,
5 ounce: Sweet butter,
3 1/2 ounce: Sugar,
2 large: Eggs,
1 t: Vanilla,
14 ounce: Dark chocolate,
14 ounce: Heavy cream,

Directions:
Chop butter into small pieces. Using fingertips, mix with flour until
mixture is even in color and sandy in texture. Shape large well in center
of mixture; add sugar, eggs and vanilla. Blend eggs, sugar and vanilla
quickly within the well; once dissolved, slowly incorporate dry
ingredients until dough forms. Roll dough into a large ball. Chill in
refrigerator at least 30 minutes.
Preheat oven to 350^. Roll out dough and line tartlet molds. Bake until
light golden color, about 8 minutes.
In large bowl, chop chocolate into small pieces. Heat cream to a boil;
pour immediately and directly over the chocolate. Let stand about three
minutes. Stir until mixture becomes smooth and glossy. If there are
lumps, place bowl over a pan of hot water and stir until lumps are melted.
Fill pre-cooked tartlet shells. Cool and set at room temperature.
