Roast Beef Dumplings Recipe

Ingredients:
1 1/2 cup: Cooked rice,
2 lbs: Ground cooked beef,
1 tsp: Salt,
1/8 tsp: Pepper,
2: Eggs,
Grated rind of 1/2 lemon,
4 Strips: bacon, chopped
1/4 cup: Bacon fat,
Juice of 1/2 lemon,
1/2 cup: Sour cream,

Directions:
(The beef can be raw or cooked) Combine the rice, beef, salt, pepper,
eggs, and lemon rind. Fry the bacon until crisp; then add and mix
well. Form dumplings the size of an egg. Flatten these a little with
a spoon. Then brown on both sides in hot bacon fat. Remove to a warm
platter. Stir the lemon juice and sour cream into the fat to make a
gravy and pour over dumplings. Randy Rigg
