Papaya And Pineapple Salsa Recipe

Ingredients:
Siebergartner,
1 small: Pineapple, peel, core --
1/2: " dice,
1 tsp: Salt,
1: Ripe papaya, 1/2" dice
1 small: Red onion, dice
1: Jalapeno, seed -- mince
1: Lime, juice only
1 cup: Cilantro, chop
1/2 tsp: Freshly ground pepper,
Directions:
Place the pineapple chunks in a colander and sprinkle with the salt
and toss well. Allow to drain for 15-20 minutes or so, then press the
pineapple against the side of the colander to extract additional
juice. Discard juices. In a glass bowl, combine all ingredients and
mix well. Set aside at room temperature for at least 3 hours. Serve
at room temp with grilled fish.
