Basic White Sauce (low-fat) Recipe

Yield: 1 cup

Ingredients:
1 cup: Water,
1 tbsp: Margarine,
1/4 cup: Instant nonfat,
2 tbsp: All-purpose flour,
-dry milk powder,
1/8 tsp: Whit pepper,

Directions:
Combine water and milk powder; stir well. Melt margarine in a heavy
saucepan over medium heat. Stir in the flour and pepper, and cook for
1 minute, stirring constantly with a whisk. Gradually add the milk,
stirring constantly. Cook 10 minutes or until thickened and bubbly.

Variations: ~Sherry-Nutmeg Sauce: Add 1 tbs grated Parmesan cheese, 1
tbs dry sherry, and 1/8 tsp ground nutmeg to Basic White Sauce; stir
well. Serve with vegetables or pasta. ~Cheese Sauce: Add

cup
shredded reduced-fat sharp cheddar cheese,

tsp dry mustard, a dash
of ground red pepper to Basic White Sauce; cook over low heat until
the cheese melts, stirring constantly. Serve with vegetables.
~Mushroom Sauce: Saut

cup of chopped mushrooms in vegetable
cooking spray for about 1 minute. Add the mushrooms, 1 tsp dried
tarragon and 1/8 tsp salt to Basic White Sauce; stir well.
