Minted Prunes Recipe

2 1/2 cup: Cooked prunes,
1/2 t: Cinnamon,
1 1/2 cup: Liquid drained from prunes,
1/8 t: Salt,
1/3 cup: Cider vinegar,
3/4 each: To 1 teasp. mint extract,
1 cup: Brown sugar, packed

Directions:
In saucepan, combine prunes, liquid, vinegar, sugar, cinnamon, salt.
Boil gently, covered 15 min. Remove from heat; stir in extract.
Cover; let cool. Use to garnish fruit salads. Or pit and stuff prunes
with cream cheese; serve on lettuce; pass French dressing. Makes 2
1/2 cups.
