Avocado And Pine Nut Salad - Bon Appetit Recipe

Ingredients:
1 Head: lettuce, torn into
1/4 cup: Minced red onion,
-bite-size pieces,
1/4 cup: Grated mozzarella,
1: Avocado, peeled, pitted
2 tbsp: White wine vinegar,
-and chopped,
1 1/2 tbsp: Dijon mustard,
1: Tomato, chopped
6 tbsp: Olive oil,
1/3 cup: Pine nuts, toasted
Salt and pepper,
1/4 cup: Alfalfa sprouts,
Directions:
Place lettuce in large bowl. Add avocado and next 5 ingredients.
Whisk vinegar and mustard in small bowl. Gradually whisk in oil.
Season with salt and pepper. Pour 1/3 C dressing over salad and toss.
Serve, passing remaining dressing.
